Stitch Cake Pops


Stitch Cake Pops

You don't need to travel all the way to Hawaii to have fun with Stitch. Whip up a batch of these cake pops in your very own kitchen, and you're sure to find that these 626-inspired treats are out of this world!
You'll need:
  • 1 box cake mix (bake as directed on box for 13 x 9 cake)
  • 1 can (16 oz) of ready made frosting
  • Wax paper
  • Baking sheets
  • White candy coating
  • Blue candy coating
  • Light blue jumbo confetti sprinkles (eyes)
  • Blue jumbo confetti sprinkles (nose)
  • White miniature confetti sprinkles (teeth and eyes)
  • Black edible ink pen (pupils)
  • Pink fruit chews (such as Jolly Rancher Fruit Chews)
  • Toothpicks
  • Small paintbrush
  • Paper lollipop sticks
  • Styrofoam block
Note: One cake makes about 48 cake pops. If you don't need that many, cut the cake in quarters and freeze any cake sections for another day. You'll need at least one ounce of candy coating for each cake pop you plan on dipping and more for any extra decorating.
Instructions:
1. After cake is cooked and cooled completely, crumble into a large bowl.
2. With a large spoon, mix cake thoroughly with about 3/4 of the can of frosting. You won't need the rest.
3. Roll mixture into quarter size cake balls and place on a baking sheet covered with wax paper.
4. Place cake balls in the freezer for about 15 minutes to firm up. You can transfer them to the refrigerator to keep chilled and avoid freezing.
5. Melt white candy coating in a heat-proof plastic bowl so that the coating is at least three to four inches deep for easier dipping. Melt in the microwave in 30 second intervals on low, stirring in between. Repeat until melted and smooth. Add blue candy color and stir until completely combined and you achieve the desired shade of blue.
6. Remove a couple of cake balls at a time from the refrigerator to work with.
7. Dip the tip of a lollipop stick into the melted coating and insert into the bottom of Stitch's head. Dip the cake pop into the coating and remove in one motion without stirring. Make sure the entire cake ball is covered. Using a deep bowl is helpful here. If your coating is too thick, you can add a few drops of vegetable oil or shortening to help thin it and make it easier to work with.
8. Remove and allow any excess coating to fall off the pop and back into the bowl, then place the pops in a styrofoam block to dry.
9. When dry, use a toothpick to dot a tiny amount of melted coating in position for the nose and attach one black jumbo confetti sprinkle. Use the same technique to attach two light blue jumbo confetti sprinkles in position for the nose. Then continue attaching 7-8 white miniature confetti sprinkles for teeth. Use a black edible ink pen to draw large teardrop-shaped pupils.
10. Finish the eyes by attaching two more white miniature confetti sprinkles.
11. For Stitch's ears, cut a pink Jolly Rancher fruit chew candy into four pieces. Each piece will be molded into one ear.
12. Shape each ear into a large flat teardrop shape and then pinch the pointed end together so there is a fold at the bottom.
13. Attach the ear to the cake pop with melted candy coating. Hold in place for a few seconds until it sets. Continue with remaining cake pops.
14. By the time you have attached all of the ears, you will notice that the ears have started to droop. That's fine.
15. Re-shape the ears so that they stand up, and if you use a small paintbrush to apply melted candy coating to the back and edge of the ears, when it dries, the ears will remain standing. However, if you don't want to do all that, you can simply attach Stitch's ears upside down and leave as is.
16. You can wrap your Stitch cake pops in treat bags tied with a ribbon and/or store them on the counter or in an airtight container.
Tips: You can use dark blue candy coating instead of tinting your own. The jumbo confetti sprinkles are also referred to as quins. If you have trouble finding black ones, you can simply pipe the noses on Stitch using a black candy writer.
